Ideal to achieve a precise, controlled infusion when preparing filter coffee by hand. This allows a uniform infusion without ‘cratering’ in the middle of the ground coffee and allows the coffee to elicit its maximum aroma. Due to the geometry of the gooseneck spout and the body specially developed for the brewing of coffee with the hand pouring method, the Buono kettle allows a particularly dosed pouring of the brewing water. Over a number of years the Konga region has developed a distinguished reputation for fine coffees, producing some of the most sought-after microlots in world. The combination of high altitude, fertile soil, consistent and plentiful rains are all contributing factors to the high status of Yirgacheffe coffees.
Konga Amederaro is a processing station in Konga village, Yirgacheffe. The station sits at 2,000 MASL and works with 1890 local farmers. Konga Amederaro is renowned for its exceptional quality.
Konga Amederaro has introduced this new blend with a brand-new processing method called Supernatural. It is a processing method which augments the traditional natural sun-drying process by increasing opportunity for controlled aerobic fermentation during drying. In this process cherries are spread in a thick layer on racks in a semi-permeable box, restricting access to sunlight while allowing limited airflow and oxygenation. This extends the overall drying time and increases the natural fermentation of the latent sugars in the cherries over the course of the drying period. This gives the coffee a very sweet and fruity taste with a vibrant note of raspberry and strawberry.
Finally, once the optimum moisture content has been reached the cherries are rested in a cool environment prior to secondary processing (hulling, grading, sorting, handpicking, and bagging in Grainpro for export).
