Since 2017, as producers of green coffee Mokha not Mocha grade their coffees by gathering as much diversity to determine the quality objectively and subjectively. In order to overcome the bias of taste, the same lot is sent to different roasteries around the world, resulting in subjective taste notes and descriptions. According to them, the SCA grading using the element of taste/smell to determine the value and/or quality of specialty coffee is not sustainable. The Company aims to begin the conversation about quality by highlighting the agricultural production process and its overall effects on the mental/spiritual activation of thought.
