Ideal to achieve a precise, controlled infusion when preparing filter coffee by hand. This allows a uniform infusion without ‘cratering’ in the middle of the ground coffee and allows the coffee to elicit its maximum aroma. We have visited this beautiful country in 2023 and in 2022 and we’re delighted to bring you this selection from Finca Montes Urales. Finca (or Farm) Montes Urales and its community benefit from being paid higher value for their better quality and meticulous sorting. This coffee is grown high in the mountains of El Salvador. It comes to us fresh as a Direct Trade, micro-lot from El Salvador Finca Montes. As a direct trade farm, the farmers and their families, and the community benefit directly from the sale of these coffee beans. As a micro-lot, this coffee crop comes from a very small area, meaning that the flavor isn't mixed with other coffees from the rest of the country. It's the purest local coffee you can get without visiting the farm yourself! It is truly farm-to-cup for wholesome goodness in every drop.
For this specific Pacas variety, it is a natural mutation of Bourbon, similar to Caturra in Brazil and Villa Sarchi in Costa Rica. The variety was discovered in 1949 on a farm owned by the Pacas family in the Santa Ana region of El Salvador. Now it is widely grown in the country; it accounts for about 25% of the country’s coffee production.
The cherries are then thinly spread on raised beds – normally with one layer in the beginning to ensure even drying. Drying is slow, with shade cover being rolled out over the beds during the hottest parts of the day. As they dry, cherries are regularly turned and sorted to remove any damaged cherries that may have been missed. Total drying time usually is between 20 and 26 days, depending on climatic conditions.

El Salvador is a country in renaissance when it comes to coffee. Almost everybody here possesses the coffee know-how drawn from three or four generations. There are simply no limits to the ways this generation of El Salvadoran producers have embraced the specialty coffee market with the duality of tradition and innovation. This is certainly the case for Beneficio El Carmen where coffee is expertly processed in many numbers of ways and gently dried on clay patios and raised beds.
Fernando Alfaro, the fourth generation to run the family’s mill, works tirelessly with coffee coming from many estates. A combination of experience and a state-of-the-art cupping lab are used to make decisions about how to bring out the best in each coffee. This is exactly the case with this naturally processed coffee from a 50 acre farm called La Trinidad, which is located near the town of Apaneca in the Illamatepec mountain range within the department of Ahuachapán.
Through years of experience, they know this coffee responds exceptionally well to being processed naturally and the method also saves a tremendous amount of water resources, which is good for the environment. During the harvest a great deal of care and focus is dedicated to picking and delivering the best quality of cherries to Beneficio El Carmen where they are placed on raised beds and turned regularly for more than 25 days to ensure even drying.
